Kettle corn and popcorn start from the same thing, a corn kernel, but they are not the same snack. What is popcorn?
Popcorn is a corn kernel heated until the moisture inside turns to steam and bursts the hull. On its own it is light, airy, and mostly flavorless until you add something to it. Movie theater popcorn gets its taste from butter and salt added after popping. Air-popped popcorn has almost nothing on it at all. The kernel is the same one used for kettle corn. What changes is how it is cooked and what goes in the pot.
What is kettle corn?
Kettle corn is popcorn made in a kettle with oil, sugar, and salt added while it pops, not after. The name comes from the large cast iron or copper kettle it is traditionally made in. As the kernels pop, they get coated in a thin layer of caramelized sugar and salt. The result is the sweet and salty flavor kettle corn is known for, with a light glaze you can see and taste on every piece. We still make ours in copper kettles the same way we did at our first event in 1998.
The main differences
Ingredients. Plain popcorn is just kernels and heat. Kettle corn adds oil, sugar, and salt during popping.
Flavor. Popcorn is neutral until seasoned. Kettle corn is sweet and salty at the same time, with the sugar and salt built in.
How it is made. Popcorn can be air-popped or oil-popped with nothing added. Kettle corn has to be stirred constantly in a kettle so the sugar coats evenly and does not burn.
Texture. Kettle corn has a light, crackly glaze. Plain popcorn is dry and airy.
Does kettle corn taste different than regular popcorn?
Yes. Even before you add any toppings, kettle corn already tastes sweet and salty because the sugar and salt cook into it. Regular popcorn tastes like whatever you put on it. If you have only ever had buttered movie popcorn, kettle corn is a different experience: lighter, a little sweet, and hard to stop eating.
Is kettle corn healthier than popcorn?
Plain air-popped popcorn has fewer calories because it has no added sugar or oil. Kettle corn has a small amount of both, so it sits between plain popcorn and heavily buttered popcorn. It is still a whole grain, still naturally gluten free, and still a lighter treat than most desserts. The honest answer: kettle corn is a treat, and a pretty reasonable one.
Which should you choose?
